You can't, for singleplayer you'd have to download the steed mod. Search around at gtagaming.com or gtaforums.com to find it.
Bumped too late, but maybe someone can find it useful.
I have the steed mod script. After you fall down from a bike, it puts you back on it. To compare, the "stunt bike" from VCMP prevents the player even from falling off the bike.
/me slaps devs for nice haxxing the game engine
If someone want the script, PM me. However you need to know how to handle with scm coding to add this feature to your game :). Or I can send a "clean" scm with just this code for stunting.
