You can't, for singleplayer you'd have to download the steed mod. Search around at gtagaming.com or gtaforums.com to find it.

I have the steed mod script. After you fall down from a bike, it puts you back on it. To compare, the "stunt bike" from VCMP prevents the player even from falling off the bike.
